Vines are cultivated on the hillsides, 30km north of Montpellier on soils southly exposed and composed of pebbly screes and clay.

 

Vinification

Harvested manually at night to keep the grapes at low temperature. Light skin maceration (12 hours), pneumatic pressure, light racking of the must. Fermentation under temperature control (15°C). Maturing on fine lees for 3 months.

 

Tasting notes

Pale yellow robe with bright green tint. The nose is fresh and intense with notes of white flesh fruits, exotic fruits and white flowers. Good balance on the palate with a fresh note on the finish and long lasting flavours of passion fruits and pear.

 

Food pairing

Great on its own or to be served with salads and fish.

 

Serving Temperature

12°C.

Tasting notes

Pale colour with rubis tints. Elegant, fine nose with notes of pink fruits, liquorice and spices. Round and soft on the palate this wine has a perfect balance between the rich aromas of fruits and a fresh acidity which gives a long lasting finish.

 

Food pairing

Drink cold in order for the wine to express its fruity flavours. Ideal as an aperitif but equally good with nibbles, grilled chicken, salmon and salads.

Vines are cultivated 30km north of Montpellier, on soils south exposed and composed of pebbly screes and clay.

 

Vinification

Royat cordon training.

Grenache & Cinsault: Traditional vinification, de-stemming of the harvest, with a 4 to 5 week vatting, thermoregulated fermentation (25°C).

Merlot: Thermovinification with a fermentation at 25°C

 

Tasting notes

Garnet-red colour with purple-blue tint. Intense nose with notes of red fruits combined with spices (vanilla and Caramel). Round on the palate with soft tannins and a complex finish combining notes of blackberries, liquorice and a slight touch of oak.

 

Food pairing

                                              This is a pleasant wine to drink on its own or with roasted meats                                                      and cheese.

Vineyard

The vineyard is located on the border of étang de Thau, well-known to be one of the coolest of the Languedoc. Chalky and sandy soils.

 

Vinification

Harvested early morning to keep the freshness of the grapes. Fermentation at 16°C after a clean racking of the must. Maturing in tank on fine lees for few months then 20% of the wine is matured in French oak barrels

 

Tasting Notes

Very aromatic nose with notes of quince, honey, spices combined with more fresh notes of citrus fruits. The mouth is fleshy and fresh with aromas of white pulp combine to give some notes of mango and ginger.

Harvested early morning to keep the freshness of the grapes. Pneumatic pressure after a light coating maceration (8°C for 6 hours). Fermentation at 16°C after a clean racking of the must. Maturing in stainless tank on fine lees for 6 months.

 

Tasting Notes

Pale yellow colour with green tints. This white wine expresses some fresh and complex notes of broom, gun flint and citrus fruits. Crisp and elegant sauvignon.

Vineyard

Issued from a vineyard located close to Montpellier on the hillsides, with vines of an average of 45 years old. Clay soils with gravels give Cabernet Sauvignon its best expression.

 

Vinification

Harvested early morning to keep the freshness of the grapes. Pneumatic pressure after a light coating maceration (8°C for 6 hours). Fermentation at 16°C after a clean racking of the must. Long fermentation and maturing in tank on fine lees for 6 months. 10% of the wine is matured in French oak barrels of 225lt.

 

Tasting Notes

Steady colour, nice viscosity. Aromatic harmony between the oak notes (clove, toasted bread, smoke) and the fruity of over matured grapes (bilberry, blackberry). The mouth offers a very nice sweetness with soft tannins and the presence of fruits at the end.

Harvested early morning to keep the freshness of the grapes. Pneumatic pressure after a light coating maceration (8°C for 6 hours). Fermentation at 16°C after a clean racking of the must. Long fermentation and maturing in tank on fine lees for 3 months. 10% of the wine is matured in French oak barrels of 225lt.

 

Tasting Notes

Dark Robe with bright red reflects. Spicy notes of eucalyptus and red fruits aromas on the nose. Sweet fruits and mellow tannins on the palate.
