Vinification

Harvested at night to keep the grapes at low temperature. Lightskin maceration (12 hours), pneumatic pressure, light racking ofthe must. Fermentation under temperature control (15°C).Maturing on fine lees for 3 months. 

 

Tasting notes

Pale yellow robe with bright green tint. The nose is fresh andintense with notes of white flesh fruits, exotic fruits and whiteflowers. Good balance on the palate with a fresh note on thefinish and long lasting flavours of passion fruits and pear.

 

Food pairing

Great on its own as an aperitive or to be served with salads and fish.

Royat cordon training.

Grenache & Cinsault: Traditional vinification, de-stemming ofthe harvest, with a 4 to 5 week vatting, thermoregulatedfermentation (25°C).

Merlot: Thermovinification with a fermentation at 25°C 

 

Tasting notes

Garnet-red colour with purple-blue tint. Intense nose with notesof red fruits combined with spices (vanilla and Caramel). Roundon the palate with soft tannins and a complex finish combiningnotes of blackberries, liquorice and a slight touch of oak. 

 

Food pairing

This is a pleasant wine to drink on its own or with roasted meatsand pizza.

Harvested manually at night to keep the grapes at lowtemperature. Light skin maceration (12 hours), pneumaticpressure, light racking of the must. Fermentation undertemperature control (15°C). Maturing on fine lees for 3 months. 

 

Tasting notes

Pale colour with rubis tints. Elegant, fine nose with notes of pinkfruits, liquorice and spices. Round and soft on the palate thiswine has a perfect balance between the rich aromas of fruitsand a fresh acidity which gives a long lasting finish. 

 

Food pairing

Drink cold in order for the wine to express its fruity flavours.Ideal as an aperitif but equally good with nibbles, grilledchicken, salmon and salads.

Tasting Notes

Very aromatic nose with notes of quince, honey, spicescombined with more fresh notes of citrus fruits. The mouth isfleshy and fresh with aromas of white pulp combine to givesome notes of mango and ginger.

Fermentation at 16°C after a clean racking of the must.Long fermentation and maturing in tank on fine lees for 6months. 10% of the wine is matured in French oak barrels of225lt. 

 

Tasting Notes

Steady colour, nice viscosity. Aromatic harmony between the oak notes (clove, toasted bread, smoke) and the fruity of over matured grapes (bilberry, blackberry). The mouth offers a very nice sweetness with soft tannins and the presence of fruits at the end.

Good matching with Barbecue and roast meat.

Dark Robe with bright red reflects. Spicy notes of eucalyptus and red fruits aromas on the nose. Sweet fruits and mellow tannins on the palate.
